The culinary expertise of the husband-and-wife owners, honed over a long journey from Hongcheon to Ganghwa Island and finally to Seoul, is fully present in every dish. ​Main Dish : The 'Sunmyeon' (Buckwheat Noodles) ​The undisputed star of the show at Seoryung is the "Sunmyeon," or pure buckwheat noodles. Made with 100% pure buckwheat, the noodles themselves boast a deep and nutty flavor. The broth, subtly seasoned to highlight the natural taste of the noodles without any overpowering flavors, leaves a delicate umami finish on the palate. It strikes a perfect balance—familiar to Pyongyang Naengmyeon (North Korean cold noodle) enthusiasts yet approachable for first-timers. The true strength of this restaurant lies in its ability to maintain the inherent buckwheat flavor, even when the dish is varied with perilla oil or a spicy seasoning. ​Side Dishes : 'Hangjeong Jeyuk' (Pork Jowl) and Dumplings ​The "Hangjeong Jeyuk," or boiled pork jowl, served alongside the noodles is another highlight. Worth the 1.5hr queue. The staff were very friendly, all the dishes were delicious. Deulgireum noodle was on point, cold noodle could be mild for people who are not used to Pyongyang naengmyun but should still give it a try, dumplings were big and juicy, and the meat is a must!!!
