Workshop by Baskin Robbins – A Next-Level Ice Cream Experience in Seoul
By Joyce S

I happened to come across this stunning building while passing by, and it immediately caught my attention. It looked nothing like the Baskin Robbins I was used to—so naturally, I had to step inside.
📍 Basic Information
🧪 What Makes This Place Special?
This is not just a typical ice cream store. It's a flagship concept store created by Baskin Robbins, located inside the SPC headquarters building in Gangnam. Here, new and creative menu items are developed and tested before being rolled out nationwide. In other words, it functions as a lab where customers can experience experimental flavors and concepts firsthand.
📖 Story Zone
We accidentally entered through the back, and the first thing we saw was the Story Zone.
This isn't a grab-and-go area. If you want to taste the ice cream here, you need to ask the staff. However, tastings are usually part of a docent program, which runs at scheduled times only.
While it's technically possible to ask a staff member, the atmosphere makes it a bit awkward to do so casually.
During the docent program, a brand storyteller known as a "Doctor" walks you through the behind-the-scenes stories of Baskin Robbins while offering tasting sessions.
Reservations are required in advance.
🎂 Cake Zone
This section is impossible to ignore.
The cakes are beautifully displayed, making it easy to browse. What stood out the most was the variety of unique character cakes you don't usually see elsewhere.
Some highlights:
Each cake includes detailed descriptions of its internal layers, which makes choosing even more tempting.
The designs are visually striking, but the flavor combinations are just as impressive—rich, layered, and thoughtfully balanced.
There were also premium gift sets (around KRW 59,000) and fun options like a dinosaur cake (KRW 29,000), which looked especially popular with kids.
Honestly, I spent quite a while debating what to get—but I was too full to try anything, which I regret.
🍧 Variety Zone
This is where things get really fun.
You'll find:
The gelato is particularly interesting—you can choose toppings, and they'll mix everything fresh on a cold plate, similar to rolled ice cream.
The parfaits also looked incredibly rich and indulgent, packed with layers of ingredients that justify the price.
If you're not in the mood for ice cream, there are baked desserts available as well.
🍪 What I Tried
Even though I was already full, I couldn't leave without trying something.
🎁 Extras
There's also a wide range of Baskin Robbins merchandise available, more than I expected.
💭 Final Thoughts
This place is more than just a dessert shop—it's an experience.
From experimental flavors to interactive programs and beautifully designed desserts, everything feels curated and intentional.
I'll definitely be coming back. Next time, I plan to bring my niece and try one of those exclusive cakes you can only find here.
